Burrito Bowls

Once again another good one! I feel like we have this Asian/Mexican theme going on. But its what we like :) I made the Tequila Lime chicken as noted in this blog. It was really good. We marinated it the night before and then grilled it up tonight. I served it with the Cilantro Lime Rice which was really good! Heated up some black beans and served with lettuce, fresh avocado, cheese, and my sisters salsa recipe.

Here is the salsa recipe.  I only used 2 serrano peppers and it was still really hot!

2 cans diced tomatoes, drained
1 cup fresh cilantro
2 cloves garlic
1 medium onion
4-10 serrano pepper

Combine all in blender/food processor, mix until blended/chopped
to preferred consistency.

This was really good. I decided to grill the chicken the night before to give it a bit of flavor as well as be cold for the next day. This was really easy to make and we really enjoyed it. We served it with some tortilla chips. For the kids I just gave them some of the grilled chicken before I made the salad.

Mongolian Beef

This was ok. It was eaten by Jim and I, but I probably won't make it again. Jim said the beef was a little tough. I think I cooked it too long. Once again the kids didn't really eat it. Guess I need to be on the lookout for a few recipes that the kids will eat!

This was great!! I made it as noted other than I put a little cornstarch in at the end to thicken it up a bit. Very tasty and will for sure make it again. The kids don't eat soup so I didn't even have them try this one. It was a 2 dollar Happy Meal McD night for them!

These were really good! Once again Savannah didn't touch them, but CJ ate them and Jim and I both enjoyed. This is a recipe where I think I will add a little more sauce at the end for flavor. I served with lettuce, cheese refried bean and sour cream. We can't do flour tortillas in this house. Next time I think I will add some tomatoes and guacamole any maybe some rice.

This was really good!  It ended up looking pretty much like the picture which is always good.  Everyone in the family liked it except for Savannah who would barely even taste it.  But CJ had seconds and Jim said he wished there was more for him to take to work the next day.  So I will make more next time and also probably make a little more sauce.  As you can see by the picture I also added in some red/green peppers and water chestnuts.  I put them in the last 10 minutes or so.  It allowed them to get warm without losing their crunch!

Jerk Chicken - Fail


Well this was the first Pinterest recipe that didn't go over so well with the whole family! The Jerk Chicken noone really liked including me. Just kind of a weird flavor. The rice was good, but when you didn't have anything to go with it kind of bland. Won't be making this one again.

Starting this up again.....

Well I didn't think I would blog about my recipes, but so many people have asked me to post how the recipes and meal planning is going so I thought I would just do it through the blog again.

Well today was 4/4 in regards to Pinterest recipes!!!  For those of you who know me well I am not much of a cook or baker.  I am also going to try and take pictures, but don't expect mine to look anything like those cook photos people take on other blogs!!  I am not that fancy :)  My sister gets the baking award in my family and well to be honest my mom never really cooked much when we were growing up (sorry Mom!!!).  But I can tell you I am a great copier!!  Give me an idea and I can copy it.  Be it cooking, scrapbooking or girl scout crafts.

My New Year's resolution was to get back to meal planning like I did two years ago.  A few things have changed since then.  I now have two kids who are eating meals with us and my husband now follows both a gluten free and lactose free diet (most of the time, we aren't perfect)!  So with that I have started trying to find new recipes that we will all enjoy.

I also intend to get back into doing all of the WW points for the meals, but that is another day!

I did one meal last week from Pinterest that I will just lump in here:

Crock Pot Coca-Cola Roast  Now that it is winter the crock pot is going to be come my friend.  Especially with busy lives like we have. (sorry no picture)

This was really good and easy. I too the juice out of the crock pot at the end and added a little corn starch to thicken it up a bit. Great gravy. Of course the kids wouldn't touch it (other than the carrots), but I will keep trying!

Today I made 4 new recipes and to my surprise all 4 of them turned out. I started off with:

Quinoa and Black Beans




This was really good. I ended up having to add some more vegetable broth to finish cooking. Also at the end when I added in the black beans I added in red peppers and a little lime juice. Since it is just me eating this will probably halve the recipe next time. Oh and also added a little more cumin than called for.

Made these for Jim today. I am not sure what the original ones taste like, but they were yummy. I had never seen dates before. Those are some weird looking things! Anyway these were good. I did have to add in the 1T water as they weren't sticking together. Will try again and maybe change up the fruit and see how they taste.

Rolo Cookies




These were really good. One suggestion would be to put the mix in the fridge for a little bit to let it set up. Then make sure your hands are sprayed with Pam (or the like) as this is REALLY sticky!

And last but not least....Brown Sugar & Balsamic Glazed Crock Pot Pork Loin





Oh my gosh!!!! This was sooo yummy! It didn't quite look like the picture in the recipe, but that didn't matter. I followed the recipe as is except I ended up with a 1 1/2 lb pork tenderloin (which was plenty for our family of 4) and doubled the glaze. Usually in recipes I find there isn't enough of the "sauce" so I usually double. Didn't need to this time. There was plenty. Everyone really liked this (even the kids!). Savannah wouldn't try the glaze drizzled on hers, but everyone else loved it. Will be adding this to the rotation for sure!
